 I like baking, and through the years I’ve learned a few things… Since the holiday season (aka cookie baking season) is just around the corner.   I’ll share a few of my tips.

1. Canisters.   I’ve had the cute counter top canisters, but I’ve found they make my kitchen look cluttered.   I also don’t like dusting/cleaning them, they don’t have an air tight  seal, and it’s difficult to tell when you’re running low on a particular item.

Thanks to my brilliant mother, I have a very practical canister set.   They are from a set of Food Storage Containers (similar to this set from Costco.) I like that they stack easily. Their “footprint” on my pantry shelf is pretty small because they easily stack.   They are air tight, and because they are clear, I can tell when I need to refill each container.   As you can tell from the picture below, it’s time to buy more oatmeal…

2. Measuring Cups.   I inherited several sets of measuring cups from both of my grandmothers.   Because I had extras, I started keeping them inside the canister.   I have a 1 cup measure inside the flour and the sugar bins, and I keep a 1/2 cup measure inside the brown sugar and oatmeal bins.   Now, I love that I don’t ever have to go searching for a measuring cup, and I don’t “contaminate” the flour cup with brown sugar.

 3. Cookie Scoop.   For years I put off getting one of these, but I finally gave in about a year ago – my life has never been the same.   I used to struggle with tablespoons trying to get just the right amount of dough each time – with a scoop all the work is essentially done for you. Perfect sized scoops everytime.

4. Parchment Paper.   I used Silpat for many years, and I have no complaints about it, it works great.   But I was swayed over to parchment paper by my mother.   She bought a case of pre-cut parchment, and gave me a big stack of it to use.   It works so much better than the parchment on a roll becase it doesn’t curl.   It makes for super easy clean up.   I just love this stuff…   If you split a case between a friend or four, it’s affordable and you each end up with a good amount because there’s such a large quantity in a case.

5.   Cookie Sheets.   Technically, these are “bun pans“, but they are the best cookie sheets I have ever had.   They are a heavy weight aluminum pan.   They don’t warp in the oven, and they just feel right in your hand.   I found mine at a restaurant supply.   The price is good, and the quality is great.   I’ve had one of my cookie sheets for years – it may not look as nice as it used to, but it still holds up to the heat and delivers quality cookies.
Another note about cookie sheets, have at least three sheets.   This way you can continuously rotate the sheets in and out of the oven.   You’ll always have one ready to go in, one ready to load, and one just out of the oven cooling for a moment before transferring to a cooling rack.

6.   Cooling Racks.   Just like the cookie sheets, I have three cooling racks.   Not so much for a rotation, but  having three racks allows for plenty of space to cool a batch of cookies.

  3. I love the idea about keeping some of the measuring cups in your containers. I have a scooper for the flour and brown sugar, but I like the idea of actually having the measuring cup. I also really like the containers…I’ll have to look into those! And, that cookie scoop…the best thing ever!! I love mine!

  4. I have two baking sheets like you have pictured – they are incredibly heavy weight and will not warp, or crackle in the oven. I LOVE them. I got mine at William Sanoma some years ago as I recall. I have never heard of precut parchment — I’ll be googling that here in a few minutes LOL Thanks for the tips!!!
